Buffalo Chickpea Sliders

Super Bowl Sunday!  In the spirit of game day today, I thought I’d share a fun spin on buffalo sliders,  perfect last minute addition to todays spread!  

These patties are vegetarian and topped with a blue cheese sauce made from yogurt and spices.  We served them slider size, but you can make the patties larger and have them as a dinner option as well.  

This week was a quick one, because we left on Friday to head up to Sedona.  We got to visit our friends and the Sedona half-marathon was on Saturday.  It is a beautiful run/walk, they have lots of options, 5/10k or the half/full marathon, something for everyone.  Including just a beautiful destination to visit.  My mom, brother and some other family members join us too.  We enjoyed the race day event and also got to celebrate my mom’s birthday!  

Our amazing friends live very close to Sedona, so they are nice enough to host us.  We love staying with them, not only are they our really good friends, but they have a little girl Isabel’s age, so they have so much fun!  Lots of giggles!    

After a weekend of fun and activity we are ready to enjoy some of the game at home, and some yummy eats on the couch.  Super Bowl is always a little different year to year, but the food themes are similar and there is always buffalo sauce on the menu!

Buffalo Chickpea Sliders

Yield: 8 mini sliders

Ingredients

    For the sliders
  • 8 Hawaiian style buns
  • 1 cup arugula
    For the patties
  • 2 tablespoons onion
  • 1 teaspoon minced garlic
  • 1 (15oz) cans chickpea, drained and rinsed
  • 1 cup cooked quinoa
  • 1/4 cup oat flour
  • 1/4 cup bread crumbs*
  • 1 green onion, chopped
  • 1 tablespoon olive oil
  • 1/4 cup buffalo sauce
  • 1 teaspoon salt
    Blue Cheese Dressing
  • 1/2 cup plain Greek yogurt
  • 3 tablespoon unsweetened almond milk
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

    For the patties:
  1. Preheat oven to 400F degrees
  2. In a food processor add onion and garlic and pulse a few times to break up.
  3. Add chickpeas and pulse until looks mashed but not smooth like hummus.
  4. In a separate large bowl add chickpea mixture, green onion, olive oil, breadcrumbs, buffalo sauce and seasonings.
  5. Mix well together until combined.
  6. Using 1/4 cup measure scoop out mixture and form into patties.
  7. Place patties on a sheet pan lined with parchment paper.
  8. Brush the patties with a little olive oil.
  9. Place in 400 degree oven and bake for 15 minutes, flip and cook additional 10-15 minutes.
  10. Let sit for 5 minutes before serving to set.
  11. Make sauce and then assemble sliders.
    For the dressing:
  1. Add all your ingredients in a medium bowl and mix well.
  2. Cover and refrigerate until ready to serve.
    Assemble the sliders.
  1. Place dressing on each side of the sliders.
  2. Add arugula to the bottom of your bun.
  3. Top arugula with buffalo patty and close the bun.
  4. ENJOY!!
